No, you can even get sick if you don't follow a few basic rules when handling food. We'll tell you what's important when it comes to kitchen hygiene.

the essentials in brief

  • If you work cleanly, you will prevent food poisoning. Hygiene!
  • Before you touch any food and between each step: wash your hands!
  • Equally important: Use separate plates and different cutlery for raw and heated meat, and do not wash raw meat!

"Healthy Kitchen?

It is estimated that over a million people across Germany become ill every year due to pathogens in food. The diseases are mainly caused by bacteria and viruses. They can be found wherever they feel comfortable: on the food itself, on the hands or on the work surfaces - even in the refrigerator or on the dishwashing sponge. And they can cause diarrhea, vomiting and serious food poisoning. Without hygiene there is no healthy kitchen.

Here's how to do it correctly

Anyone who follows the following instructions has done a lot for a healthy, hygienic kitchen:

  • Actually banal: wash your hands! Between work processes, and especially when you are handling raw meat and salad at the same time. You should therefore use separate cutlery and dishes for meat. This also applies to grilling 😉
  • Change dishwashing sponges and the like at least weekly, wash tea towels and rags at 60 degrees - because there can be a lot of bacteria here.
  • Clean kitchen appliances, especially if they are B. came into contact with raw meat or raw eggs. And get rid of scratched cutting boards, because bacteria feel at home in the grooves.
  • Meat is particularly perishable - and meat that has gone bad can lead to, among other things, diarrhea. Store the dead animal at a maximum of four degrees and minced meat at a maximum of two degrees.
  • Warning, surprising to many: You shouldn't wash raw meat! Touching and splashing water are more likely to spread bacteria throughout the kitchen. Simply take it out of the pack with a fork and put it in the pan.
  • Meat, minced meat, poultry and fresh sausages and fish should definitely be cooked through on all sides. Rule of thumb for meat thermometer owners: core temperature in the meat of 70 degrees Celsius for at least 10 minutes.
  • Raw fish and dishes with raw eggs such as: For example, cool tiramisu or mayonnaise immediately and eat within 24 hours!
  • If you have any leftovers from lunch, be sure to store them in a cool place until the next time you eat them and reheat them thoroughly the next time you reheat them!
