The end consumer creates most of the food waste
The largest proportion of food waste occurs in private households due to poor recycling, storage and incorrect planning. Around 75 kg of wasted food per person per year: That's more than agriculture, production, trade and gastronomy combined. The good news: Over 40% of waste can theoretically be avoided. We have it in our hands!
A lot of waste is avoidable
Fruit and vegetables in particular are often thrown away. Not only due to incorrect storage, but also because not the entire product is used. What's behind the leaf-to-roots trend and can you really just eat radish leaves?! Tobi Koch exposes the TOP sources of error when it comes to storage, finds out how we buy food correctly so that as little as possible has to go away, what tricks we use to keep food for a particularly long time and how you can tell whether products are still good even after the best-before date has expired. This way we can save a lot of resources and also money!
Proper planning and shopping helps avoid food waste
Food waste in the household can be easily reduced through sensible planning and proper storage. This is particularly important for organic products, as they are not artificially preserved and spoil more quickly than conventional goods. On the one hand, the right compartment in the refrigerator and pantry is important, and on the other hand, when it comes to fruit and vegetables, it is also important to choose the food that is next to it. Some types of fruit and vegetables release the ripening gas ethylene. These should be stored individually and, above all, separated from sensitive varieties.
Leaf To Roots: What is it?
In addition to the “nose-to-tail” movement, which has already been discussed by the eco-checkers (use as many parts of the animal as possible), there is also a similar trend in the fruit/vegetable sector: it is called “leaf-to-roots”. Whole, followers of this “movement” eat fruits and vegetables completely. No sections, no cores are cut away. Everything from pineapple stalks to banana peels is included. We explain which parts of the plant you need to be careful with because they are poisonous!
What does the best before date tell me?
Although the best before date (BBD) is important for assessing how long a product can be safely consumed, it should not be used as a throwaway date. Sealed and preserved foods in particular generally have a significantly longer shelf life. The motto here is: look, smell, taste.
What is the difference between a best-before date and a use-by date?
The situation is different with the use-by date on perishable foods such as meat. After expiration, these can contain germs that are harmful to health and may therefore no longer be consumed!
