Trust in the food industry is not exactly great. But are the findings in this video really that “shocking”?

Fact check: Iodine can be used to identify mayonnaise that is harmful to health. It is understandable that consumers do not trust many foods. Some sites often report alarmistly about poisons in food. A video is now intended to demonstrate how simple methods can be used to determine that food has been manipulated.

Do these simple methods really do what they claim?

In the video, two types of mayonnaise are sprinkled with iodine and mixed with it. The mayonnaise on the left then becomes very discolored - supposedly a sign that it is harmful to health.

You can use iodine (or iodine) to detect starch in foods - some people may remember this from chemistry class. Starch in food is a multiple sugar (polysaccharide or carbohydrate) that consists of long chains of glucose. Starch is found naturally in many foods, such as potatoes, baked goods, rice and grain products.
Classic mayonnaise consists only of egg yolks, spices and oil. Industrially produced mayonnaise (especially the low-fat version) also contains gelatin, pectin, agar agar (also known from chemistry lessons) as thickeners - and starch.

So is this starch harmful to health?

No! Starch is found in countless foods, including and especially in low-fat mayonnaise. The reason is simple: real mayonnaise is usually very high in calories and has a fat content of at least 80%, salad mayonnaise and tartar sauce have at least 50%. However, low-fat mayonnaise lacks a large part of the fat, which is why starch, among other things, serves as a thickening agent. However, this starch is not harmful to health, neither in mayonnaise nor in any other food in which it is found.

The claim “Iodine can be used to detect mayonnaise that is harmful to health” is false.

The color is caused by the starch, which is not harmful to health.
